Your choices stick across every tutorial on this device.
To change the default Angle and Altitude for the Global Light, which is used by “Bevel & Emboss” and several other styles, select Layer > Layer Style > Global Light… and make your changes.
This setting will become the new default for the Angle and Altitude for all Layer Styles that use Global Light.
